Description of Lactose:

Lactose, sometimes referred to as milk sugar, is one of the 5 naturally existing ingredients found in fluid milk. There are 2 types of Lactose, Lactose Monohydrate CAS 10039-26-6 and Lactose Anhydrous 63-42-3 Food Grade or Pharmaceutical Grade. When dried, Lactose powder is creamy, white in appearance with sweet taste.

With limited aftertaste, Lactose monohydrate and Lactose Anhydrous has a lot of applications. Some of lactose’s most intriguing functions include flavor enhancement, crystallization modification, browning ability when baked and its natural aptitude to heighten viscosity levels of the products that use this ingredient

Lactose Monohydrate and Lactose Anhydrous powder are disaccharide sugar derived from galactose and glucose in milk. Lactose makes up around 2–8% of milk (by weight), although the amount varies among species and individuals, and milk with a reduced amount of lactose also exists. Lactose Monohydrate and Lactose Anhydrous can be extracted from sweet or sour whey.

Lactose Monohydrate and Lactose Anhydrous is found in milk and milk products. The small intestine produces an enzyme called lactase. Lactase will break down lactose into 2 simpler forms of sugar: glucose and galactose. The body then absorbs these simpler sugars into the bloodstream.
